Ingredients
1 Cup + 2 Tablespoon (144g) oat flour
6 Tablespoon (48g) Cornstarch
1 Tablespoon Baking Powder
1/2 Cup + 1 Tablespoon (135g) Goat Yogurt
1 Tablespoon (180g) Pure Maple Syrup
2 Tablespoon (40g) Xylitol-Free Peanut Butter
¾ Cup (120g) Pure Pumpkin Puree
Coconut Oil Spray (For Greasing)
Directions
Preheat the oven to 400°.
In a bowl, mix together oat flour, cornstarch, and baking powder.
In another mixing bowl, add goat yogurt, maple syrup, peanut butter, and pumpkin puree. Mix well.
Add dry ingredients into the wet mixture and mix well.
Spray mini cake pans with coconut oil to grease.
Fill each cake liner with ¼ cup of cake mix and bake for 30-40 minutes. Cakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from the pan and cool on a wire rack or in the freezer.
