Ingredients
- 1 Whole Pumpkin (sugar pumpkin recommended)
- 1–2 TBSP Olive Oil (optional)
Directions
Preheat the oven to 350°F.
- Wash the pumpkin, then carefully slice it in half from top to bottom. Scoop out seeds and stringy flesh (save seeds to roast separately if desired)
- Place pumpkin halves cut-side down on a parchment-lined baking sheet. Lightly coat with olive oil. Pierce skin a few times with a fork or knife to let steam escape.
- Place in the oven and roast for 45–60 minutes, or until the flesh is soft and easily pierced with a fork.
- Cool completely before handling. Scoop the pumpkin flesh from the skin and mash or puree.
- Store in the refrigerator for 3–4 days, or freeze in silicone molds or airtight containers for up to 3 months.
